Tomato Pesto Tart

This is an impressive and delicious tart that is very easy to prepare. Great for a women's luncheon appetizer or first course or tea party tidbit because you can slice it into quarters, eighths, or tiny-sizes and serve with toothpicks.




1. Unfold piecrust on a lightly greased baking sheet. Roll into a 12-inch circle. Brush outer 1 inch of crust with water. Fold edges up and crimp. Prick bottom.


2. Bake at 425 degrees for 8 to 10 minutes. Remove from oven. Sprinkle with 1 cup mozzarella cheese; let cool 15 minutes. Arrange tomato slices over cheese.


3. Stir together remaining 1 cup mozzarella cheese, mayonnaise, and next 3 ingredients. Spread over tomato slices.

4. Bake at 375 degrees for 20 to 25 minutes. Remove from oven; sprinkle with basil. Yields: 4 main dish or 8 appetizer servings.
