1. Place all ingredients, except chicken, in slow cooker and stir to combine. Add chicken and coat well with sauce. Cover and cook on LOW for 6 to 8 hours.
2. Taste before serving. If necessary, re-season with one more lemon and a dash of salt, pepper, and any other flavors that may have diluted during cooking.
3. You can make the sauce the night before in the pot and add the raw chicken in the morning.
Hint: Serve with grilled or baked/broiled asparagus and rice. Can serve leftovers in chicken salad.
