Baked Barbecued Chicken with Zucchini

Barbecue sauce provides the smoke and flavor in this easily assembled dish. Pop the casserole in the oven, then go and relax.

1. Preheat the oven to 375 degrees F. Grease a 1-1/2 quart baking dish.

2. Layer the zucchini in the baking dish. Arrange the chicken over the zucchini. Sprinkle with salt and pepper. In a small bowl, combine the barbecue sauce, onion, sherry, basil, and oregano and mix together. Pour over the chicken. Cover the baking dish.

3. Bake for 1 hour, basting the chicken with the sauce every 15 minutes or so.

4. Serve hot. Serves 4.
